Ingredients

You'll need: Stovetop, Pressure Cooker.

Method

  1. Heat oil in a pressure cooker or a heavy pan. Add mustard seeds and cumin seeds, letting them splutter.

  2. Add asafoetida and the chopped tomatoes. Sauté until the tomatoes are soft and mushy.

  3. Add the diced potatoes and brinjal chunks. Toss them well in the oil for 2-3 minutes.

  4. Add turmeric, red chilli powder, coriander-cumin powder (dhana-jeeru), salt, and jaggery. Mix well to coat the vegetables uniformly.

  5. Pour in the measured water. If using a pressure cooker, close the lid and cook for 2-3 whistles on medium heat. If using a pan, cover and simmer for 15-20 minutes until vegetables are extremely soft.

  6. Once cooked, mash a few pieces of potato lightly with the back of your spoon to naturally thicken the gravy.

  7. Garnish with fresh chopped coriander and serve hot.

Melt-in-the-mouth brinjal and soft potatoes bathed in a light, sweet, and spicy vibrant red broth.

Getting it right

Tip

The classic Kathiyawadi touch is to have a slightly watery, sweet-and-spicy gravy (rasa) that perfectly coats the soft vegetables. Using a pressure cooker makes the brinjal melt beautifully into the sauce.
