You'll need: Stovetop.

Method

  1. Heat oil in a pan. Add mustard seeds and cumin seeds, letting them splutter.

  2. Add the chopped spring onion whites. Sauté for 2 minutes until they turn translucent.

  3. Add ginger-garlic paste and chopped tomatoes. Cook until the tomatoes are completely soft and mushy.

  4. Add turmeric, red chilli powder, and coriander powder. Mix the spices well with the onion-tomato base.

  5. Add the chopped spring onion greens and salt. Sauté for 3-4 minutes. The greens will shrink very quickly.

  6. Pour in water to create a slight gravy and bring it to a boil. Turn off the heat.

  7. Add the thick spicy sev strictly 2 minutes before serving. Mix gently so the sev coats the sabzi but retains some crunch.

How to tell it's done

A brilliantly contrasting bite of soft, wilted savory greens hiding pockets of spicy, slightly softened but still textural chickpea noodles (sev).

Getting it right

Tip

Never add the sev while the curry is actively boiling on the stove, and never add it too early. The hot water will instantly dissolve the sev, turning your sabzi into a thick, unappealing porridge.

This spicy Kathiyawadi delicacy is meant to be scooped up with hot Bajra Bhakri or Jowar Roti.
