Method

  1. Heat ghee in a pan and gently roast the whole cashews on a low flame until they acquire a beautiful golden brown hue. Remove and set aside securely.

  2. In the very same pan, add the cooking oil. Introduce the cumin seeds and bay leaf, permitting them to splutter and infuse the fat.

  3. Drop in the slit green chilli, sautéing rapidly for a few seconds.

  4. Pour in the tomato puree. Cook with intent on medium heat until the oil begins separating visibly from the edges.

  5. Stir in the turmeric powder, red chilli powder, and coriander powder. Sauté the spices for 2 minutes to cook out their raw edge.

  6. Blend in the melon seed paste (magaz paste). Cook this down for 3-4 minutes, stirring continuously as the nutty paste is highly prone to catching on the bottom.

  7. Pour in water to reach your desired consistency, and season accurately with salt.

  8. Bring the constructed gravy to a confident simmer and let it mature for 5 minutes.

  9. Fold the roasted cashews into the simmering gravy. Cook for exactly 2 more minutes.

  10. Stir in the fresh cream, heavily crushed kasuri methi, and garam masala. Mix everything harmoniously and turn off the heat immediately.

How to tell it's done

Highly crunchy, ghee-roasted cashews suspended in a thick, opulent, and mildly sweet tomato-nut reduction.

Getting it right

Tip

Boiling the cashews in the liquid for long takes away their roasted crunch. Stir them in right at the end.

Pairs luxuriously with crispy Tandoori Roti or flaky Laccha Paratha.
