You'll need: Pressure Cooker.
Method
Prepare the Dhokli dough by mixing whole wheat flour, gram flour, a pinch of turmeric, a portion of the red chilli powder, carom seeds, a pinch of salt, and a dash of oil. Knead into a firm dough using a little water. Shape into small flat discs and set aside.
Heat the remaining oil in a pressure cooker. Add mustard seeds and let them splutter. Add the chopped cluster beans and sauté for 2 minutes.

Add the remaining turmeric powder, red chilli powder, coriander-cumin powder, and salt. Mix well so the beans are coated with the spices.
Pour in the measured warm water and bring it to a rolling boil. Drop the prepared dhokli pieces into the boiling liquid one by one.
Add jaggery and gently stir. Close the pressure cooker lid and cook for 3 whistles on medium heat.
Let the pressure release naturally. Open and garnish with fresh coriander before serving.

Soft, pillowy wheat dumplings mixed with tender green beans in a sweet, spicy, and tangy semi-thick broth.
Getting it right
Tip
Do not stir vigorously after adding the dhoklis, or they will break and turn the curry into a mushy paste.
What to serve it with
Best enjoyed steaming hot with Bajra Bhakri or soft Phulkas, alongside a glass of Masala Chaas.
