Method

  1. In a mortar and pestle, pound the garlic cloves along with Kashmiri red chilli powder and a spoon of water to make a thick, pungent 'Lasun (Garlic) Chutney' paste.

  2. Heat oil in a heavy pan. Add the boiled baby potatoes and pan-fry them for 3-4 minutes until they get a light golden crust. Remove and keep aside.

  3. In the same oil, add cumin seeds and let them crackle.

  4. Lower the flame and add the freshly pounded garlic-chilli paste. Sauté vigorously for 2 minutes until the garlic loses its raw bite and the oil turns deep red.

  5. Turn the flame to the absolute lowest. Pour in the whisked curd while stirring continuously to prevent splitting.

  6. Cook the yogurt-garlic masala until oil separates from the edges. Add coriander powder and salt.

  7. Add the fried baby potatoes and the water. Coat the potatoes well, cover, and simmer for 5-7 minutes so the flavors seep into the potatoes.

  8. Turn off the heat, garnish with fresh coriander, and serve hot.

Tip

Pounding the garlic fresh with the dry chilli powder releases natural oils that you absolutely cannot replicate with store-bought ginger-garlic paste.

An intense, fiery Kathiyawadi classic. Tame the heat by eating it with Bajra Rotla and a glass of thick Buttermilk.
