Ingredients

Quantities are for 2 servings.

Ten minutes. Cut the guava last so it does not soften in its own juice before serving.

Method

  1. Wash the guavas thoroughly. Cut them into bite-sized cubes. If the center seeds are too hard, scoop out the inner core and only use the fleshy part.

  2. In a mixing bowl, combine the guava pieces and fresh ruby-red pomegranate seeds.

  3. Add the finely chopped mint leaves. Mint adds a cooling element that contrasts the spice.

  4. Sprinkle the black salt, chaat masala, and a dash of red chilli powder over the fruits.

  5. Drizzle the fresh lemon juice and toss the fruits gently until they are beautifully coated in the dark spice mix.

How to tell it's done

Sweet, juicy pops of pomegranate cutting through the dense, gritty crunch of spiced guava.

Getting it right

Tip

Selecting guavas that are slightly yellow on the outside but still firm to touch guarantees the perfect balance of sweetness and crunch.

What to serve it with

Serve immediately as an afternoon snack. Letting it sit will make the fruits weep water and turn mushy.

Common mistakes

The salad turns to mush.
Use guavas that are still firm to the thumb, and cut them into cubes rather than thin slices. A soft guava collapses the moment salt and lemon touch it.
The spice sits in patches.
Sprinkle the masala over the fruit from a height and toss twice, gently. Poured in one spot it clumps on a few pieces and leaves the rest plain.

Substitutions

  • Firm pear or apple can replace the guava out of season and takes the same spicing.
  • Amchur can stand in for the lemon juice and keeps the fruit drier.

Storing and reheating

Eat within the hour. Pomegranate seeds keep three days in the fridge and mint a couple of days wrapped in damp paper, but guava browns and softens once cut, so prepare that last.
