Method

  1. Heat the measured olive oil in a wide pan and cook the onion until soft.

  2. Add the garlic and squid, then cook until the squid turns opaque and releases some liquid.

  3. Stir in the rice and tomato puree so the grains are coated with the pan juices.

  4. Add the measured wine and cook until its sharp aroma softens.

  5. Stir in the squid ink, then add hot stock gradually, stirring often as the rice absorbs the liquid.

  6. Continue cooking until the rice is tender with a slight bite and the risotto looks creamy.

  7. Finish with parsley, lemon juice, black pepper, and adjusted salt. Serve immediately.
