Method
Prepare the Chettinad Masala: In a dry pan, roast the fennel seeds, coriander seeds, dry red chillies, and black peppercorns on low heat until highly aromatic. Cool and grind into a fine powder.
Heat the sesame oil in a wide heavy-bottomed pan or traditional clay pot (meen chatti) over medium heat.
Add the mustard seeds and let them splutter. Follow immediately with the fenugreek seeds, whole garlic cloves, and curry leaves. Fry for a few seconds.
Add the peeled whole shallots. Sauté for 4-5 minutes until they turn slightly soft and golden.

Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes break down and turn completely mushy, and oil starts separating from the edges.
Add the ground Chettinad spice powder to the pan. Mix well and sauté for 1 minute to cook the spices in the oil.

Pour in the tamarind extract along with a cup of water. Bring the curry to a rolling boil, then lower the heat, cover, and simmer for 10 minutes until the gravy thickens slightly and smells rich.

Gently slide the fish pieces into the boiling gravy in a single layer. Do not stir vigorously from this point onward to prevent breaking the fish.
Cover and cook on low heat for 5-7 minutes. Once the fish is cooked through and opaque, turn off the heat.

Let the curry rest for at least an hour before serving, so the flavours settle into the fish.
How to tell it's done
Flaky, delicate fish submerged in a thin, fiercely spicy, dark reddish-brown broth characterized by a sharp tamarind tang and robust pepper heat.

Meen Kuzhambu is famous for tasting even better the next day. Cooking it in a traditional unglazed clay pot enhances its earthy flavor tenfold.
