Method

  1. Place the fresh, delicate paneer (chhena) onto a clean surface. Using the heel of your palm, massage and knead it relentlessly for 5-7 minutes. It must surrender all graininess to become a satiny, buttery paste.

  2. Bisect the whipped paneer paste into two perfectly equal halves. Set one raw half completely aside.

  3. Transfer the remaining half of the paneer into a premium non-stick pan. Whisk in the sweetened condensed milk.

  4. Cook this amalgamation over the lowest possible heat, executing a constant stirring motion. It will temporarily liquefy, but persevere for 4-5 minutes until the mass tightens and naturally pulls away from the pan's perimeter.

  5. Remove the pan from the heat source. Allow the cooked chhena reduction to cool just until it is safe to handle with bare hands.

  6. Unite the warm, cooked paneer with the reserved raw paneer half. Infuse the batch with the freshly crushed cardamom powder and rose water.

  7. Fold them together gently until just combined. Over-kneading costs the sweet its delicacy.

  8. Roll the mixture into smooth, even gollas. They are ready to eat straight away.
