Quantities are for 2 servings.

You'll need: Stovetop.

No long inactive time is needed, but rest the dough briefly and cool the suji-coconut filling before sealing the pastries.

Method

  1. In a large mixing bowl, combine the all-purpose flour and hot melted ghee. Rub the mixture between your palms until it becomes crumbly like coarse sand and holds its shape when pressed.

  2. Add the warm water a little at a time and knead into a tight dough. Cover it with a damp cloth and let it rest for 20 minutes.

  3. Make the filling: heat the measured amount of ghee in a heavy pan over a very restricted, low thermal baseline. Add the semolina (suji) into the ghee and roast, stirring constantly until the grains undergo a deep Maillard reaction, projecting a deep golden-brown aesthetic and explosive aromatics.

  4. Turn off the heat. Without hesitation, add the grated dry coconut, refined powdered sugar, and cardamom powder directly into the hot roasted semolina. Mix well. Cool the filling completely.

  5. Take lime-sized portions from the rested dough block. Roll them, expanding them into thin round discs (puris), ensuring the outer edges are firmly sheared thinner than the fortified center.

  6. Add a very dense, concentrated of the dry core directly onto the center of the disc. Brush a little water along the outer edges to act as a seal.

  7. Fold into a half-moon, pressing the edges to seal tightly. Pinch and twist the edge to make the traditional gothna ridge, or press the edges with an fork.

  8. Heat the frying oil in a deep kadhai to a patient medium-low. Lower the filled pedakiyas in, only a few at a time. Fry them very slowly until a crisp, even, golden-brown crust forms all over.

  9. Remove, drain well, and let the pedakiya cool completely. Store in an airtight container.

How to tell it's done

The crust should be blistered, flaky and crisp, with a dry grainy suji-coconut filling that smells of cardamom.

Getting it right

Tip

Keep the suji-coconut filling dry and seal the edges well. Any gap can spill filling into the oil and darken the whole batch.

What to serve it with

Serve pedakiya for Teej, Chhath or Diwali with tea, or pack cooled pieces for relatives and travel.

Common mistakes

The pedakiya opens while frying.
Do not overfill, cool the filling first, moisten the rim lightly, and press or crimp the edge firmly.

Storing and reheating

Cool pedakiya completely and store in an airtight container at room temperature for up to 2 weeks. Keep away from moisture.
