Method
Heat the designated amount of ghee in a heavy-bottomed pan positioned over a strictly low flame. Add the prescribed measure of desiccated coconut.
Gently dry-roast the coconut for 2-3 minutes to awaken its essential oils and natural aromatics. Exercise extreme caution to prevent any Maillard reaction; the coconut must remain flawlessly pristine white.

Pour the sweetened condensed milk straight into the pan. Start stirring at once, steadily, keeping the heat low.
Cook the mass for 3-4 minutes. Observe as the mixture dynamically thickens, completely absorbing the condensed dairy, and actively detaches from the pan's perimeter to form a cohesive, soft dough-like structure.

Turn off the heat completely. Fold in the cardamom powder and make sure it is spread evenly through the mixture.
Evacuate the hot mixture onto a cooling plate. Monitor the temperature drop closely; it must only cool slightly until it rests comfortably within a warm, manipulatable temperature range.
Micro-grease your palms with an imperceptible drop of ghee. Extract small, uniform portions of the thermally warm mixture and compress them tightly, rolling them into structurally perfect, smooth spherical ladoos.
Roll each shaped ladoo through a shallow layer of desiccated coconut so it is evenly coated all over.
Permit the finished sweets to cure and set entirely at ambient room temperature prior to sealing them in professional airtight storage.
How to tell it's done
The ladoos are required to be radiantly white, possessing an extraordinarily soft core that collapses instantly on the palate, releasing a profound, milky coconut essence.
Getting it right
Tip
Shape the laddus while the mixture is still warm. Let it get too cold and it dries out, crumbles, and won't hold together.
