Method

  1. Melt the ghee in a premium heavy-bottomed kadhai over a highly controlled low flame. Sift the gram flour (besan) directly into the fat, folding vigorously to form a thick, homogenous paste.

  2. Now the roasting, which is the heart of the recipe. Stir the besan constantly over low heat for 15-20 minutes. It feels stiff at first, but as it goes the flour releases the ghee and turns into a light, frothy mass with a strong toasted-nut smell, reaching a deep golden brown.

  3. Once it is properly roasted, turn off the heat. Keep stirring for another 2 minutes so the kadhai's residual heat disperses and the base does not scorch. Set the pan aside.

  4. In a separate saucepan, combine the sugar and water. Over medium heat, boil it to a one-thread syrup: a drop pressed between thumb and forefinger should pull into a single thread that holds before it breaks.

  5. Whisk the fine cardamom powder into the finished syrup. Immediately, pour this blistering hot sucrose solution directly into the resting roasted besan.

  6. Fold it together quickly and firmly. Within about 60 seconds the mixture thickens, comes together and pulls cleanly away from the sides of the pan.

  7. Without waiting, tip the hot fudge onto your greased setting tray. Smooth and level it quickly with an offset spatula. Scatter slivered pistachios evenly over the top, pressing them gently but firmly into the surface as it cools.

  8. Mandate a 2-3 hour resting period at ambient room temperature for structural crystallization. Once entirely firm and set, employ a sharp chef's knife to section the slab into pristine geometric squares.

Getting it right

Tip

The 1-string consistency of the sugar syrup is critical. If it falls short, the barfi will be like halwa (soft and sticky). If it exceeds 1-string, the barfi will become hard and crumbly.

Store in an airtight container; it stays good for weeks. A classic gift sweet during festivals.
