How to Read a Recipe Before You Start Cooking
Before cooking, read the entire recipe once. Understand yield and serving size
Yield describes what the recipe produces. Serving size describes how that yield may be divided.
A soup might yield 1.5 litres and be described as six servings, but the practical portion depends on whether it is served as a starter, main meal or side.
Check whether the stated yield suits the number of people you are feeding. Also check whether your cookware can hold the quantity, particularly when increasing it. Look for hidden preparation in the ingredient list
Words after an ingredient often contain work that must happen before Step 1.
Compare these examples:

The recipe does not begin with a whole onion, raw chickpeas or cold butter. It assumes those ingredients have already reached the stated condition.

- cooked, soaked, thawed or drained
- softened, melted, chilled or at room temperature
- peeled, seeded, grated or crushed
- toasted, roasted or cooled
- divided, reserved or plus more for serving

Match each ingredient to where it is used
Read the ingredient list and instructions side by side.
Every listed ingredient should have a destination, and every ingredient mentioned in the method should normally appear in the list.
Check for four common complications:
- Divided ingredients: “Two tablespoons oil, divided” means the oil is used in more than one step.
- Separate garnishes: Herbs, yoghurt, nuts, citrus or sauces may be intended only for finishing.
- Ingredients mentioned only in the method: Water and salt are sometimes omitted from the main list.
- Unexpected order: Part of an ingredient may need to be reserved before everything else is combined.
This check can expose an incomplete or poorly edited recipe before you depend on it.
When something appears to be missing, ask whether the omission is harmless, whether the intended amount can be inferred safely or whether choosing a better-written recipe would be wiser.
Find the waiting steps
Waiting time may be hidden inside a short instruction.
A recipe might say “marinate for two hours”, “chill until firm” or “cool completely before slicing”. Each phrase can significantly change when you need to begin.

- chilling or freezing
- resting
- proofing
- cooling

Active time is the time you spend chopping, stirring, shaping or checking.
Inactive time is the time during which the food marinates, simmers, bakes, rests or cools without continuous attention.
Total time is the full elapsed time from beginning to completion. It includes active and inactive stages, although some active tasks may fit inside a waiting period.

- Heat the pan.
- Stir-fry the vegetables.
A more practical working sequence is:
- Start the rice.

- When the rice has about five minutes remaining, heat the pan.
- Stir-fry the vegetables as the rice finishes.
- Let the rice rest briefly while the sauce coats the vegetables.
This is not about rushing. It is about using the waiting time created by one task to complete another.
Beginners should choose simple overlaps. Trying to manage several heat-sensitive tasks at once can create more stress rather than greater efficiency.
Use doneness cues, not time alone
Treat cooking time as a range, then use physical cues to judge whether the food is ready.
Equipment, ingredient size, starting temperature and heat level can all affect how quickly a dish cooks.
Useful doneness cues include:
- Colour: Onions are translucent, pastry is deeply golden or vegetables have browned edges.
- Texture: Lentils are tender, cake springs back lightly or pasta is firm without being hard.
- Aroma: Spices smell toasted, or garlic becomes fragrant without smelling burnt.
- Consistency: A sauce coats the back of a spoon or a soup reaches the intended thickness.
- Tenderness: A knife or fork meets the resistance described by the recipe.
- Internal temperature: Safety-critical foods reach the appropriate minimum temperature.
For foods whose safety depends on internal temperature, appearance alone is not enough. FoodSafety.gov recommends checking with a food thermometer and publishes safe minimum internal temperatures and rest requirements for different foods.
A reliable recipe should ideally give both an estimated time and a description of the finished state. “Cook for 15 minutes” is less useful than “cook for 12–15 minutes, until the vegetables are tender and lightly browned”.
Decide on substitutions before starting
A substitution is a technical decision, not only a flavour preference.
Ask three questions before replacing an ingredient.
1. What function does the ingredient perform?
An ingredient may provide:
- liquid
- fat
- acidity
- sweetness
- structure
- thickening
- browning
- seasoning
- leavening
2. Will the replacement behave similarly?
Two ingredients can taste similar but react differently.
Yoghurt and milk differ in thickness and acidity. Canned and fresh tomatoes release water differently. Granulated sugar and liquid sweeteners do not provide exactly the same structure.
3. Does the quantity or technique need adjustment?
A thicker replacement may require additional liquid. A sweeter ingredient may require less added sugar. An ingredient that browns quickly may need a lower cooking temperature.
Flexible soups, stews and salads often tolerate substitutions. Baking, confectionery, preservation and recipes dependent on precise emulsions or chemical leavening are less forgiving.
The safest substitution is one that replaces the original ingredient’s function, not merely its flavour or appearance.
How much mise en place is actually necessary?
Prepare enough in advance to protect the fast and irreversible parts of the recipe.
Mise en place means having ingredients and equipment organised before cooking. It does not require placing every teaspoon of seasoning in a separate bowl, but it should prevent you from chopping garlic while oil is smoking.
Complete preparation is most useful when:
- the recipe cooks quickly, such as a stir-fry
