Method

  1. Heat the oven to 180°C and place the onion, carrot, celery, and garlic in a roasting pan.

  2. Mix most of the softened butter with thyme, parsley, salt, and black pepper, then rub it over and under the turkey skin where possible.

  3. Place the turkey on the vegetables, pour some stock into the pan, and roast until the turkey is deeply golden and cooked through.

  4. Rest the turkey for about 20 minutes before carving.

  5. For the gravy, melt the remaining butter, stir in the flour, then whisk in the pan juices and remaining stock until smooth and thick.

  6. Slice the turkey and serve with the warm gravy.

Common mistakes

The breast is dry by the time the legs are done.
