Ingredients
Quantities are for 4 servings.
You'll need: Oven, Stovetop.
Includes 5 minutes of resting time after baking so the creamy hotdish scoops cleanly.
Method
Heat the oven to 200°C and grease a medium baking dish.
Heat oil in a pan and cook onion with ground beef until the beef is browned.
Stir in cream of mushroom soup, milk, green beans, corn, salt, black pepper, and half the cheddar.
Transfer the filling to the baking dish and spread it evenly.
Arrange tater tots in a single layer on top and sprinkle with remaining cheddar.
Bake until the filling bubbles and the tater tots are crisp and golden.
Rest for 5 minutes before serving.

How to tell it's done
The filling should be creamy and savory, while the tater tots should be crisp and golden on top.
Getting it right
Tip
Keep the tater tots in a single layer so they crisp instead of steaming.
What to serve it with
Serve with a green salad, pickles, or steamed vegetables.
Common mistakes
- The tots come out pale and soggy.
- Lay them in a single layer, frozen, and give the oven its full heat. Piled two deep they steam each other, and a hotdish is judged almost entirely on the crust.
- The filling is watery under the crust.
- Cook off the liquid from the beef and onion before the soup goes in, and use the vegetables thawed and drained. Otherwise the moisture rises through the tots as it bakes.
Substitutions
- Tater Tots — Use Potato Wedges only if tater tots are unavailable, but the hotdish will lose its classic topping.
- Ground Beef — Ground Turkey can be used for a lighter version, but beef gives the traditional hotdish flavor.
Storing and reheating
Keeps four days in the fridge and freezes for three months, baked or unbaked. Reheat uncovered in a hot oven so the tots crisp again; a microwave leaves them soft.
