Method
Clean and wash the fish slices gently. Pat them completely dry with a paper towel.
Prepare the fiery wet rub: In a bowl, mix the ginger-garlic paste, red chilli powder, turmeric powder, salt, and the extracted thick kokum juice. Mix well to form a thick, vibrant red paste.
Generously massage this wet masala onto the fish slices, ensuring every nook and edge is coated. Let the fish rest for flavor absorption.
Prepare the dry crust: On a wide flat plate, mix the fine semolina (rava) and rice flour. You can add a small pinch of red chilli powder and salt to this dry mix so the crust isn't bland.
Place a flat tawa or frying pan on medium heat and add the coconut oil. Let it get sufficiently hot.
Take each marinated fish slice and press it firmly into the dry rava-rice flour mixture. Ensure both sides and the curved edges are completely enveloped by the dry grains. Dust off any loose excess.
Carefully place the coated fish slices onto the hot tawa. Shallow fry on medium heat undisturbed for 4-5 minutes until the bottom crust turns a rigid golden-brown.

Using a wide spatula, gently flip the fish. Fry the other side for another 3-4 minutes until the fish is cooked through (the flesh will flake easily and become opaque white).

Drain on kitchen paper momentarily and serve piping hot.

An audibly crunchy, gritty, golden semolina shell that encases a firm, meaty, and stark-white fish steak laced with fiery-tangy red masala.
Getting it right
Tip
Kokum is the soul of coastal Malvani/Goan frying. If using tamarind or lemon instead, the flavor profile changes entirely. Kokum provides a deep, fruity tartness without making the fish soggy.
What to serve it with
An absolute knockout seafood starter. Must be served immediately while the rava crust is shattering-crisp, alongside raw onion rings and a wedge of lemon.
