Method

  1. In a mixing bowl, combine the coarsely crushed boiled corn, grated mozzarella, grated processed cheese, chopped green chilli, fresh coriander, black pepper powder, mixed herbs, and salt.

  2. Mix everything to form a thick, dough-like stuffing. Divide the mixture and shape them into 3-inch long, thin cylindrical logs (like cigars).

  3. Take a spring roll wrapper and place it on a clean board in a diamond shape. Keep the remaining wrappers covered to prevent drying.

  4. Place a cheese-corn log near the bottom corner of the wrapper. Roll it tightly upwards halfway.

  5. Fold the left and right corners inward tightly like an envelope. Apply the prepared flour slurry on the top triangular edge and complete the roll, sealing it firmly.

  6. Heat the cooking oil in a pan over medium heat. Fry the cigar rolls in batches until they turn evenly golden brown and crisp (about 3-4 minutes).

  7. Remove with a slotted spoon and drain on paper towels. Serve immediately while the cheese is molten.

How to tell it's done

A blistered, ultra-crisp pastry shell that breaks cleanly, revealing a stretchy, gooey, sweet-and-savory molten cheese and corn center.

Getting it right

Tip

Ensure the corn is completely drained of water and patted dry before mixing. Excess moisture will make the cheese seep through the wrapper during frying.

What to serve it with

Serve with a fiery chipotle mayo or a sweet chilli garlic dip. Perfect for high-tea or party appetizers.
