Method

  1. Drain the soaked moong dal thoroughly. Put the lentils in a blender with the ginger, some of the green chilli, cumin seeds, a measure of salt and a small splash of water. Blend to a smooth batter about as thick as pancake batter.

  2. Construct the Protein Core: In an auxiliary basin, bind the rustic paneer crumbles with the precision-diced onions, remaining chopped chilli, vibrant coriander, chaat masala, and a micro-pinch of salt. Toss cohesively.

  3. Heat a heavy non-stick tawa over medium heat. Rub it with a little oil and wipe away the excess with a tissue to leave a smooth cooking surface.

  4. Pour a full ladle of the lentil batter into the centre of the pan. Spread it outwards straight away in widening circles into a thin, even crepe.

  5. Drizzle a highly controlled perimeter of fat (oil or ghee) along the crepe's edges. Command the heat for 2-3 minutes, allowing the underside to undergo polymerization and develop a rigid, golden-brown crust.

  6. Spread a generous layer of the seasoned paneer filling evenly over one half of the crisp chilla.

  7. Wield a wide spatula to fold the barren hemisphere sharply over the stuffed zone, applying a slight downward compression to lock the payload.

  8. Maintain thermal contact for an ensuing 30 seconds to drive heat into the paneer center.

  9. Lift it off the tawa. Cut it in half with a knife and serve immediately, while it is still steaming.

How to tell it's done

The chilla should be paper-thin and crispy on the edges, holding a warm, moist, and tangy paneer-onion scramble inside.

Getting it right

Tip

The batter must be completely smooth; any large dal grains will tear the chilla while spreading. Ensure the tawa is not overly hot before pouring the batter.

What to serve it with

A filling breakfast. Serve it hot with sweet tamarind chutney and a spicy green mint chutney.
