Method
In a bowl, toss the cut soya chaap pieces with the ginger-garlic paste, red chilli powder, some of the chaat masala and salt. Leave to rest for 15 minutes so the spices work into the dense, layered chaap.

Batter Synthesis: In a secondary container, thoroughly whisk the all-purpose flour (maida), cornflour, rice flour, black pepper dust, and the residual salt.
Add ice-cold water a little at a time, whisking continuously, to get a smooth batter of medium thickness. It should be thick enough to coat the back of a spoon without running straight off.
Establish a broad staging area by distributing the Panko-style breadcrumbs (or mechanically crushed cornflakes) extensively across a flat platter.
Dip each marinated soya piece fully into the batter so the whole surface is coated.
Move the dripping piece straight into the dry crumbs. Press the crumbs firmly into the batter so they stick well. Repeat with the rest of the batch.
Bring a substantial volume of frying lipid to a robust medium-high temperature within a deep kadhai.
Lower the coated chunks into the hot oil. Fry for 5-6 minutes, turning them now and then. They are done only when the outside is deep golden brown and sounds hard when tapped with a metal skimmer.

Extract and eliminate residual oil via immediate transfer to industrial paper towels.
While the exterior remains dangerously hot, barrage the units with a heavy dusting of the remaining chaat masala.
Service must occur with absolute immediacy.
How to tell it's done
The outer shell should be loud, craggy and shattering, over a chewy, dense, sharply spiced mock-meat centre.

Tip
Chef's Tip: Soya chaap is dense and bland on its own, so rubbing it with dry spice before it goes into the batter is not optional: skip it and you get a good-looking coating over a dull bite. Panko or crushed cornflakes give it the same craggy crunch as fast-food fried chicken.

A firm favourite for parties or match days. Serve it with a rich garlic mayonnaise and a sweet chilli sauce.
