Method

  1. Tenderize the meat: make sure the finely minced mutton keema is completely dry. In a large mixing bowl, mix the meat thoroughly with the raw papaya paste and salt. Cover tightly and refrigerate for a full 8 hours; the papaya needs that long to tenderize the meat.

  2. After the 8 hours, take the meat out. It will be exceptionally soft, almost like a thick slurry, which is exactly what you want.

  3. Secondary Flavor Emulsion: Introduce the ginger-garlic paste, the pulverized brown onion paste, Kashmiri chilli powder, spicy red chilli powder, and the fiercely aromatic, highly specialized Galouti masala dust.

  4. Add the roasted gram flour (besan) to bind the mixture lightly. Pour in the rose water, the kewra water and the saffron-infused milk.

  5. This is the step that matters most: knead the mixture hard and without stopping, using the heel of your palm, for 10-12 minutes. The friction breaks down what is left of the meat fibres and turns the mixture into a silky, very smooth paste.

  6. Grease both hands well with ghee. Take small, even portions of the very soft meat paste and shape them carefully into flat discs. The paste is sticky, so work gently.

  7. Thermal Initiation: Drive a massive, flat cast-iron tawa or professional non-stick griddle to an absolute, sustained low thermal output. Melt a portion of the pure ghee.

  8. Place the delicate kebabs in the pan. Shallow-fry patiently for 5-6 minutes over the lowest heat. The aim is to let the underside form a dark, crusty seal.

  9. Moving them too early will break them apart. Once the base has set firm, slide a thin spatula underneath and turn each one over carefully; handle them roughly and they will fall apart. Fry the second side in the hot ghee for the same 5 minutes.

  10. Slide them gently out of the pan and serve immediately.

How to tell it's done

Demand a profoundly dark, fiercely crispy, ghee-scorched exterior shell that shatters effortlessly, instantly liquefying into a criminally luxurious, highly volatile, and intensely perfumed meat slurry requiring absolutely zero mastication force.

Getting it right

Tip

Chef's Tip: The story goes that these were made for a Nawab who had no teeth left. Skip the raw papaya, or cut short the ten minutes of crushing the mixture by hand, and you get a Shami kebab instead: good, but not a Galouti.

What to serve it with

Serve them with care, each one on a small, very soft 'Ulte Tawa ka Paratha', topped with paper-thin onion slices, meant to go down in a single bite.
