No inactive time is required; have the sauce hot, brownie warm and ice cream very firm before heating the sizzler plate.

Method

  1. Prepare the chocolate sauce: Heat the fresh cream in a small pan until it just starts to bubble at the edges.

  2. Pour the hot cream over the chopped dark chocolate. Let it sit for 2 minutes, then whisk into a smooth, glossy chocolate sauce. Keep it warm.

  3. Place a cast-iron sizzling plate (sizzler pan) on direct high flame on the stove for 5-7 minutes until it is smoking hot.

  4. Carefully transfer the smoking hot iron plate onto its wooden base.

  5. Immediately place the warm chocolate brownie squares in the center of the hot plate.

  6. Place a firm frozen scoop of vanilla ice cream on top of each brownie.

  7. Drop a small piece of butter directly onto the hot iron plate to start the sizzle.

  8. Pour the hot chocolate sauce over the ice cream and onto the hot plate. It should bubble hard and create a short burst of steam.

  9. Garnish with the roasted walnuts and serve instantly at the table while it's bubbling.

How to tell it's done

The brownie should be warm and fudgy, the ice cream firm at first, and the sauce bubbling around the plate edges.

Tip

Heat the plate well but assemble fast. A firm scoop of ice cream gives you a hot-cold contrast before it melts into the sauce.

Serve at the table while the sauce is bubbling, with roasted walnuts or extra chocolate sauce.

Common mistakes

The ice cream disappears before serving.
Freeze the scoops hard and bring every component to the table before the hot plate comes off the stove. Slow assembly melts the contrast.

Storing and reheating

Store brownie and sauce separately: brownies keep airtight for 2 days, and chocolate sauce refrigerates for up to 5 days. Do not store the assembled sizzling dessert.
