Ingredients

No inactive time; whisk the sattu into a paste first so the drink stays smooth instead of lumpy.
Method
In a large pitcher or jug, add the Sattu powder.
Pour in a small amount of the chilled water. Whisk briskly to form a smooth paste with no dry lumps of flour.
Once smooth, pour in the remaining chilled water and mix well.
Add the roasted cumin powder, black salt, regular salt, and lemon juice. Stir to combine.
Add the finely minced onions, green chillies, mint leaves, and fresh coriander. (Mincing the onion very finely is key so you can drink it comfortably).
Stir everything well. Taste and adjust lemon or salt if needed.
Pour into tall glasses and serve immediately. (Stir before drinking as Sattu tends to settle at the bottom).

A thick, earthy, highly refreshing drink with crunchy bits of onion and a sharp tang of lemon and black salt.

Getting it right
Tip
Do not confuse raw Besan (gram flour) with Sattu. Sattu is made from pre-roasted black chickpeas and can be consumed raw, whereas besan must be cooked.
