Method
Methodically dry roast the coriander seeds and dry red chillies in a pan until their volatile aromas are fully released. Allow them to cool slightly before pulverizing them into a coarse, rustic powder.
Heat some of the oil in a heavy skillet until very hot. Flash-fry the onion petals and diced capsicum for 2 minutes, just long enough to blister them while keeping their snap. Remove and set aside.

In the identical pan, warm the remaining oil. Introduce the finely chopped onions and sauté with dedication until they achieve a deep golden-brown caramelization.
Vigorously stir in the ginger garlic paste, cooking until the sharp, raw notes evaporate. Follow immediately with the tomatoes, simmering the mixture until it reduces into a thick paste that confidently releases its oil.
Integrate the freshly crushed kadhai spice blend, garam masala, and salt. Toast this concentrated masala expertly to awaken every nuance of flavor.
Tumble the halved mushrooms along with the reserved, semi-cooked capsicum and onion petals into the pan. Toss and stir-fry on a medium flame for 5-7 minutes until the mushrooms are exquisitely tender and steeped in the spices.

Getting it right
Tip
It is a cardinal sin to overcook the capsicum and onion petals in this dish; they must endure to deliver a refreshing, sweet crunch that perfectly cuts through the intensely spiced mushroom foundation.
What to serve it with
Demands to be served straight from the fire alongside buttery Naan or a perfectly layered Lachha Paratha.
