Ingredients
Quantities are for 2 servings.
Five minutes. Nothing here can be prepared far ahead, which is the point of the dish.
Method
Place the bread slices on a board. If the bread is very soft, toast it lightly so the surface can hold the tomato.
Rub the cut side of the garlic gently over each slice. Use a light hand so the garlic supports the tomato instead of overpowering it.
Rub the halved ripe tomatoes directly over the bread until the pulp soaks into the surface.
Drizzle with the measured extra virgin olive oil, then finish with salt and black pepper.
Serve immediately while the bread still has contrast between crisp edges and juicy tomato topping.
How to tell it's done
The bread should be juicy on top but not soggy all the way through.
Getting it right
Tip
The dish depends on ripe tomatoes and good olive oil, so keep the ingredient list simple and fresh.
What to serve it with
Serve as a tapa with olives, croquettes, or a light salad.
Common mistakes
- The bread goes soggy almost at once.
- Toast it properly first, so there is a crisp surface to hold the pulp. Soft bread rubbed with tomato has nothing to resist the juice and collapses.
- The garlic overwhelms the tomato.
- One light pass with the cut clove is enough, and only on the toasted side. Garlic rubbed hard onto warm bread is far stronger than it seems on the board.
Substitutions
- Use Baguette if rustic Bread is not available.
- Use Olive Oil if Extra Virgin Olive Oil is unavailable, but the flavor will be milder.
- Do not use tomato puree here; fresh ripe Tomato is essential for the texture.
Storing and reheating
Made and eaten within minutes — there is no version of this that keeps. If you are serving several, toast the bread ahead and set out halved tomatoes, garlic and oil so people rub their own.
