Method

  1. Heat ghee in a heavy-bottomed pot or pressure cooker over medium heat.

  2. Add the cumin seeds, black cardamom, and black peppercorns. Let them sizzle in the hot ghee for a few seconds to release their robust oils.

  3. Add the generously sliced onions. This is the most crucial step: sauté the onions on medium heat patiently until they turn a dark, rich, caramelized brown.

  4. Ensure the onions are deeply browned but not black or burnt, as burnt onions will make the rice bitter.

  5. Once the onions are perfectly browned, add the measured water and salt. The water will immediately take on a lovely light brown hue from the onions.

  6. Bring the water to a rolling boil.

  7. Drain the soaked basmati rice and carefully add it to the boiling liquid. Stir gently once.

  8. Cover the pot with a tight-fitting lid, lower the heat to the absolute minimum, and simmer for 12-15 minutes until all the water is absorbed.

  9. Turn off the heat and let the pot sit undisturbed for 5-10 minutes. Open and fluff gently before serving.
