Method

  1. Make the Omelette: Whisk the eggs with a portion of chopped onion, a pinch of turmeric, and a little salt. Heat a portion of the oil in a wide frying pan. Pour the eggs and cook a thick, classic omelette. Flip to cook both sides. Remove to a board and cut into 1.5-inch square pieces. Set aside.

  2. Make the Gravy: Heat the remaining oil in a kadhai or pan on medium heat. Add cumin seeds and let them crackle.

  3. Add the remaining chopped onion. Fry until it turns golden brown.

  4. Add ginger-garlic paste and slit green chillies. Sauté for 1 minute to remove the raw smell.

  5. Add tomato puree, turmeric, red chilli powder, coriander powder, and salt. Cook the masala for 5-7 minutes until the tomatoes soften and oil separates from the edges.

  6. Pour in the measured water. Bring the gravy to a rolling boil. Let it simmer for 3 minutes to thicken slightly.

  7. Gently drop the square omelette pieces into the bubbling gravy. Push them down lightly so they submerge.

  8. Lower the heat, cover, and let the omelette pieces simmer in the gravy for 2-3 minutes. They will absorb the liquid and puff up beautifully.

  9. Sprinkle garam masala and fresh coriander. Turn off the heat and serve.

Getting it right

Tip

Do not simmer the omelette pieces for too long in the gravy, or they will break apart and become soggy. Add them just 3 minutes before serving.
