Method
Charge a heavy-bottomed culinary pot with the full-fat milk and bring it to a rolling boil. Downshift to a medium-low simmer, allowing the milk to reduce to nearly half its original volume. Scrape the bottom frequently to prevent a protein skin from forming.
Simultaneously, in a specialized small pan, distribute the sugar and the required measure of water evenly. Apply medium heat strictly without stirring. Monitor closely until the sugar undergoes a Maillard reaction, transforming into a deep amber caramel. Remove immediately.
With extreme caution, stream the scalding caramel directly into the boiling reduced milk. The mixture will display vigorous bubbling. Whisk efficiently until the caramel dissolves seamlessly, rendering the milk a gorgeous reddish-brown tint.
Add the date palm jaggery to the milk. Stir gently until it has melted, simmer for 2 minutes, then take the pan off the heat.

Permit the sweetened milk to cool naturally until it drops to a lukewarm state—it must feel perfectly comfortable and neutral when tested against the skin of your wrist.
In a sterile prep bowl, whisk the hung curd until it resembles a smooth, lump-free cream. Temper this culture by whisking in a small ladle of the lukewarm milk.
Transfer this tempered active culture back into the primary pot of reduced milk. Employ a whisk to integrate the entire batch completely.
Pour the mixture into porous clay pots or ramekins. Cover them with muslin or foil and leave them somewhere warm and undisturbed for 8-12 hours to set.

Upon successful setting, transfer the Mishti Doi to a refrigerator for a minimum of 3-4 hours prior to service. This chilling process finalizes its iconic firm, luxurious texture.

Tip
Using a clay pot (matka) absorbs excess moisture during the fermentation process, resulting in an exceptionally thick and creamy yogurt that won't release whey.
