You'll need: Stovetop.

No inactive time; like most stir-fries it moves fast once the pan is hot, so have the sauce mixed and everything cut before you start.

Method

  1. Mix sweet soy sauce, soy sauce, tomato ketchup, red chilli sauce, and lemon juice in a small bowl.

  2. Heat a wide pan and add the measured oil. Cook tofu until lightly golden, then move it to one side.

  3. Add onion, garlic, and green chili. Stir-fry until aromatic and lightly softened.

  4. Pour in the beaten egg and scramble it just until softly set.

  5. Add noodles, potato, and the prepared sauce. Toss quickly until the noodles are evenly coated and hot.

  6. Add bean sprouts and crushed peanuts. Stir-fry briefly so the sprouts stay crisp.

  7. Serve immediately with extra lemon juice if desired.

The noodles should be glossy and separate, tofu lightly crisp, and sprouts still crunchy.

Serve as a street-food-style snack, lunch, or dinner with cucumber slices on the side.

Common mistakes

The noodles clump and break.
Loosen them with wet hands before they go in and toss with tongs rather than a spoon. Cold noodles straight from the packet stick together, and stirring hard to separate them in the pan snaps them instead.
Everything goes soggy.
High heat, fast work, and the sprouts last. Mee goreng is a two-minute stir-fry over a fierce flame; at moderate heat the sauce pools and the noodles stew in it.

Substitutions

  • Check noodle labels because some yellow-style noodles contain egg while others are wheat-only.
  • For a peanut-free version, omit roasted peanuts and review sauce labels for cross-contact.

Storing and reheating

Best straight from the pan. It keeps a day in the fridge, though the sprouts go limp; refresh in a hot pan with a splash of water. It does not freeze.
