  1. Heat a portion of coconut oil in a wide pan. Delicately shallow fry the marinated fish fillets, merely sealing the exterior. They must not take on a dark crust. Reserve on a plate.

  2. In the same seasoned pan, introduce the remaining coconut oil. Pop the mustard seeds vibrantly and toss in half of your fresh curry leaves.

  3. Sauté the finely sliced onions, ginger juliennes, chopped garlic, and slit green chillies. Soften them patiently to a glass-like translucence, vehemently avoiding any browning to protect the stew's signature yellow hue.

  4. Sprinkle the turmeric and black pepper powder, stirring quickly to toast the spices without scorching.

  5. Pour in the thin coconut milk component. Season to perfection with salt, bringing the liquid to an inviting, gentle simmer.

  6. With utmost care, slide the sealed fish fillets back into the gently bubbling broth. Cover and poach on low heat until the fish turns opaque and flaky.

  7. Adorn the pan with the tomato slices and the remaining curry leaves. Simmer fleetingly just to warm and lightly soften the tomatoes.

  8. Reduce the heat to its lowest ebb. Pour in the thick, luscious coconut milk. Swirl the pan gracefully—never stir roughly. Warm through without boiling to prevent a disastrous split.

  9. Cut the heat entirely. Fold in a splash of fresh lemon juice. Grant the curry a moment of rest before serving.
