Method

  1. Process the pistachios into a coarse powder and transfer to a mixing vessel. Incorporate a fraction of the powdered sugar, a faint trace of food color (if utilizing), and minimal water. Knead into a firm, vivid green dough and shape into thin, uniform cylindrical logs. Set aside.

  2. Mill the cashews in a dry processor using very brief, sequential pulses to prevent oil extraction. Sift the resulting meal through a fine mesh to obtain a perfectly dry, flour-like cashew powder.

  3. Put the remaining sugar and water in a non-stick pan. Cook over a moderate flame, stirring gently, until the sugar dissolves and the syrup reaches one-string consistency.

  4. Reduce the heat to its absolute minimum. Fold the sifted cashew powder and aromatic cardamom into the syrup, blending seamlessly.

  5. Keep cooking and working the mixture over a low flame. Take it off the heat the moment it pulls away from the pan into a single dough-like ball.

  6. Tip the hot cashew mixture onto parchment paper. While it is still warm and pliable, knead it gently through the paper until completely smooth.

  7. Put the smooth cashew dough between two sheets of parchment and roll it into an even, thin rectangle.

  8. Position the reserved pistachio logs along the edge of the flattened cashew sheet. Roll the exterior cashew layer tightly around the core, rolling the final cylinder smoothly against the board to seal all seams.

  9. Section the extended log into elegant 2-inch segments using a sharpened chef's knife. Allow structural stabilization at ambient temperature before presentation.

Getting it right

Tip

If the cashew dough feels too dry and crumbly to roll, sprinkle just a few drops of warm water or milk and knead again. If it's too sticky, cook it for another minute.

Decorate with edible silver foil (varak) for a premium sweet-shop appearance. Serve as a special treat for guests.
