The besan rests for 30 minutes after dhrabo, then the set mohanthal needs 4-5 hours at room temperature before cutting.
Method
Do the 'Dhrabo': In a wide vessel, position the coarse besan. Mix in a measured portion of warm milk alongside a corresponding fraction of melted ghee.
Rub the mixture between your palms for 3-4 minutes, until it feels like coarse, damp breadcrumbs. Press it firmly down into the bowl, cover it tightly, and leave it to rest undisturbed for 30 minutes.

Following the rest, break down the compressed mixture and force it through a wire sieve (chalni). This sieving step ensures smoothly even, granular separation. Set aside.
In a heavy-bottomed kadhai, bring the primary volume of ghee to a low heat. Add the sifted, granular besan.
Roast the mixture over low heat for 15-20 minutes, stirring all the while. It will froth up, darken to a deep brick brown, and smell strongly nutty. Take the pan off the heat at once and let it cool briefly.

Make the sugar syrup: boil the sugar and water in a saucepan. Stir in the saffron liquid. Watch it closely until it reaches a one-and-a-half-thread consistency (chashni). One thread leaves it gooey; two threads set it hard as a brick.
Pour the exceptionally hot sugar syrup straight into the roasted besan (which should be warm, not scorching). Stir with high velocity. Add the cardamom and mace powder.
Maintain the rapid stirring motion; the mixture will rapidly thicken and cleanly separate from the walls of the vessel.
Without delay, transfer the mass into a pre-greased setting tray (thali). Distribute evenly and apply a sophisticated garnish of slivered almonds and pistachios, pressing them gently into the surface.
Let it rest 4-5 hours at room temperature to set, then cut into neat squares for serving.

The fudge should be rich and grainy, hold a clean square, and melt slowly with clear saffron and roasted besan notes.
Getting it right
Tip
Watch the syrup closely: one string leaves mohanthal too soft, while two strings can make it firm and dry. Aim for a thread that begins to split.

Serve kesar mohanthal for Diwali, weddings or prasad plates, cut into small squares with pistachios and almonds on top.
Common mistakes
- The mohanthal sets either gooey or hard.
- Roast the besan patiently and stop the syrup near 1.5-string consistency before mixing.
Storing and reheating
Store mohanthal in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks. Bring to room temperature before serving.
