Quantities are for 2 servings.

Fifteen minutes, nearly all of it grating the papaya. Dress it just before it goes to the table.

Method

  1. Peel the raw green papaya, cut it in half, and scoop out the white seeds completely. Grate the flesh using a medium grater or a julienne peeler.

  2. In a large mixing bowl, add the shredded raw papaya, chopped tomatoes, and finely chopped green chillies.

  3. Add the roughly crushed roasted groundnuts. These will provide a brilliant crunch against the soft papaya.

  4. Sprinkle chaat masala, salt, fresh coriander, and squeeze the lemon juice over the mixture.

  5. Toss vigorously using serving spoons until the papaya strands are well-coated with the tangy dressing.

Tip

Run the shredded papaya under ice-cold water for 2 minutes and drain well before using; this makes it extra crispy.

Common mistakes

The papaya strands go limp.
Grate the papaya coarsely, not finely, and dress it at the last minute. Fine shreds salted early collapse into a wet heap.
The salad tastes bitter.
Scoop out every white seed and the soft pith around them. That is where the bitterness sits, not in the flesh.

Substitutions

  • Green mango can replace the raw papaya and is sharper, so ease back on the lemon.
  • Roasted chana dal stands in for the peanuts where there is a nut allergy.

Storing and reheating

Eat it the same day. Grated papaya keeps a day undressed in the fridge in a sealed box, but once the salt and lemon are on it there is no holding it.
