Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Includes marination time.

Method

  1. Process the freshly grated coconut, coriander seeds, cumin seeds, garlic, a portion of the green chillies, and turmeric powder with a splash of water into an exquisitely smooth, vibrant yellow paste.

  2. Warm the coconut oil in an authentic clay pot or deep pan. Add the sliced onions, sweating them gently until they become soft and translucent, ensuring they do not take on any brown coloration.

  3. Fold in the chopped tomato and the remaining slit green chillies. Sauté lightly to allow the tomatoes to just begin to soften their structure.

  4. Spoon the vibrant yellow coconut masala paste into the pan. Fry the mixture delicately on a low flame until the raw fragrance of the spices completely dissipates.

  5. Pour in water to establish the broth, seasoning correctly with salt. Bring the exquisite base to a very gentle simmer.

  6. Carefully slide the marinated prawns into the simmering liquid. Poach them briefly; the prawns will transform into an opaque, beautiful pink hue rapidly.

  7. Reduce the heat to its absolute minimum. Luxuriously swirl in the thick coconut milk and the splash of vinegar. Let it steep warmly without ever reaching a vigorous boil, safeguarding the milk's emulsion.

  8. Extinguish the flame and serve this soothing coastal masterpiece immediately.

How to tell it's done

Plump, juicy prawns swimming in a vibrant yellow, silky, creamy, and mildly tangy coconut broth.

Getting it right

Tip

Caldine is revered for being a delicate, soothing, sunshine-yellow curry. Vigorously boiling thick coconut milk will invariably cause it to curdle; hence, it must only be introduced at the very end off a high flame.

What to serve it with

Pairs well with Goan red unpolished rice, crusty pav, or soft neer dosa.
