Method

  1. Heat olive oil in a pot over medium heat and cook the onion and carrot until slightly softened.

  2. Add the garlic and cook briefly until fragrant.

  3. Add the lentils, tomato puree, bay leaf, oregano, water, salt, and black pepper.

  4. Bring to a boil, then reduce the heat and simmer until the lentils are tender.

  5. Mash a small portion of the lentils against the side of the pot to lightly thicken the soup.

  6. Remove the bay leaf and stir in the red wine vinegar.

  7. Adjust seasoning and finish with chopped parsley.

The soup should be hearty and lightly thick, with tender lentils that still hold some shape.
