Method
Heat olive oil in a pot over medium heat and cook the onion until soft and lightly sweet.
Add the garlic and cook briefly until fragrant.
Add the cooked chickpeas, bay leaf, oregano, water, salt, and black pepper.
Simmer gently until the chickpeas are very tender and the broth tastes rich.
Mix the flour with a little warm broth in a small bowl, then stir it back into the stew if you want a thicker texture.
Simmer for a few more minutes until lightly thickened.
Remove the bay leaf, stir in lemon juice, and adjust seasoning.
Finish with chopped parsley before serving.
