You'll need: Stovetop.

Method

  1. Heat a portion of the cooking oil in a large kadai over medium heat. Add the cauliflower, carrots, and french beans. Sauté for 5-6 minutes until lightly roasted and halfway cooked. Remove and set aside.

  2. In the same kadai, add the remaining oil. Add cumin seeds and let them splutter.

  3. Add the finely chopped onions and sauté until golden brown. Stir in the ginger garlic paste and cook until the raw smell disappears.

  4. Pour in the tomato puree, turmeric powder, red chilli powder, coriander powder, and salt. Cook the masala until oil separates from the edges.

  5. Add the sautéed vegetables, green peas, and paneer cubes into the masala. Mix gently to coat everything well.

  6. Pour a splash of water if the gravy is too dry. Cover and simmer on low heat for 8-10 minutes until the vegetables are tender.

  7. Turn off the heat, sprinkle garam masala, and garnish with fresh coriander leaves. Serve hot.

A rich, thick, clinging gravy wrapping around perfectly tender-crisp vegetables and soft paneer.

Getting it right

Tip

For an authentic dhaba touch, slightly crush a teaspoon of kasuri methi and add it along with the garam masala at the end.
