You'll need: Stovetop, Pressure Cooker.

Method
Heat the mustard oil in a pressure cooker or deep pan until it reaches smoking point to remove its pungency. Lower the flame and add the cumin seeds and bay leaf.
Add the finely chopped onions and fry on medium heat until they turn dark golden brown. A dark caramelization is key to this curry's rich color.
Add the ginger garlic paste and slit green chillies. Sauté vigorously for 2 minutes.

Add the tomatoes along with turmeric, red chilli powder, coriander powder, and salt. Cook the masala until the oil separates and the tomatoes are completely mashed.
Toss the potato chunks and boiled black chickpeas (kala chana) into the masala. Sauté for 3-4 minutes so the vegetables absorb the spicy base.

Pour in the water. If using a pressure cooker, seal the lid and cook for 3 whistles. If cooking in an open pan, cover and simmer for 20 minutes until the potatoes are thoroughly cooked.

Once cooked, mash a few pieces of potatoes and a small handful of the chickpeas against the sides of the pan. This naturally thickens the curry, giving it a hearty, rural texture.
Stir in the garam masala and simmer for 2 more minutes. Turn off the heat, garnish with fresh coriander, and serve.

A robust, dark, and spicy thick broth generously studded with buttery potatoes and slightly chewy, protein-dense black chickpeas.

Tip
For an intense, 'dhaba-style' earthy flavor, swap the standard garam masala with a teaspoon of good quality 'Meat Masala' (which is completely vegetarian) at the end of cooking.
