Method

  1. Heat the cooking oil and half of the butter on a large flat tawa or wide heavy-bottomed pan over high heat.

  2. Add the sliced onions and sauté briskly until they turn translucent and start to catch color at the edges.

  3. Stir in the ginger garlic paste and cook for a minute until the raw aroma vanishes.

  4. Add the julienned green and red capsicums along with the tomatoes. Toss everything on high heat for 3-4 minutes to retain their crunch.

  5. Lower the heat. Add the coriander powder, cumin powder, red chilli powder, salt, and garam masala. Mix thoroughly.

  6. Place the paneer batons onto the tawa. Gently fold them into the masala to avoid breaking.

  7. Let the sabzi cook undisturbed for a minute so the masala sticks to the bottom. Scrape the bottom (khurchan) vigorously and fold it back into the paneer.

  8. Add the remaining butter, fresh cream, and crushed dried fenugreek. Toss for another 1-2 minutes until everything is coated and glistening.

  9. Turn off the heat and serve immediately straight from the tawa.

How to tell it's done

Semi-dry with a beautiful sheen; the paneer is soft inside with slightly charred, intensely flavored scraped masala clinging to it.

Getting it right

Tip

The essence of 'Khurchan' is scraping the caramelized bits from the bottom of the pan. Using a cast-iron tawa gives the best authentic smoky flavor.

What to serve it with

Pairs excellently with crisp Rumali Roti, Garlic Naan, or layered Laccha Parathas.
