Method
Heat a minor portion of the ghee in a pan. Sauté the sliced mushrooms dynamically on high heat for 3-4 minutes until they release their water, brown slightly, and lock in their umami flavor. Remove and set aside.

In the very same pan, heat the remaining ghee. Add the finely chopped onions and fry steadily on medium heat until they reach a golden brown perfection.
Add the ginger-garlic paste and sauté expertly for 1 minute to neutralize any raw smell completely.

Incorporate the prepared tomatoes, Kashmiri red chilli powder, and a tiny splash of water. Cook the masala vigorously until the tomatoes melt into a thick, mushy paste and the ghee begins to separate.
Stir in the smooth cashew paste and cook for exactly 2 minutes on low heat to build the luxurious gravy body.

Add the grated paneer and the reserved sautéed mushrooms along with the salt. Toss everything gently but thoroughly to combine without breaking the mushrooms.
Introduce just a small splash of water (as the dish is traditionally meant to be thick and semi-dry). Simmer for 3-4 minutes so the robust flavors meld intimately.

Finish gracefully with the fresh cream, garam masala, and fresh coriander. Turn off the heat definitively and serve.
