Method
Mix all-purpose flour, sugar, and salt in a bowl.
Rub cold butter into the flour mixture until it looks crumbly.
Add the egg and bring the dough together gently without over-kneading.
Chill the dough for 30 minutes.

Use the remaining dough to make lattice strips over the jam.
