Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
No inactive time when using cooked chicken, bacon, and egg; add extra time if cooking those from raw.
Method
If needed, season and cook the chicken breast on a pan until fully cooked, then rest and slice it.
Cook the smoked bacon until crisp and chop it into small pieces.
Whisk olive oil, vinegar, Dijon mustard, salt, and black pepper to make a sharp vinaigrette.
Spread the chopped lettuce in a wide bowl or platter.
Arrange the chicken, bacon, egg, avocado, tomato, and blue cheese in neat rows on top. Drizzle with dressing just before serving.
How to tell it's done
The salad should be crisp and fresh, with creamy avocado, tender chicken, crisp bacon, and crumbly cheese.
Getting it right
Tip
A Cobb salad looks best when the toppings are arranged in rows rather than mixed too early.
What to serve it with
Serve as a complete lunch or light dinner with extra dressing on the side.
Common mistakes
- The salad wilts before it is served.
- Dress at the table. Everything else can be arranged in advance, but oil and vinegar on lettuce is a countdown of a few minutes.
- The rows collapse into a mixed bowl.
- Chop the ingredients small and lay them in tight bands on a wide, shallow platter. A Cobb is a composed salad; a deep bowl makes the arrangement impossible to keep.
Substitutions
- Use cooked leftover chicken to make this salad faster.
- Blue cheese is classic in Cobb salad, but reduce the amount if you prefer a milder flavor.
- Add the avocado close to serving time so it stays fresh-looking.
- Keep the dressing separate until serving if meal-prepping the salad.
Storing and reheating
Keeps a day in the fridge undressed with the avocado left out. Cooked chicken and bacon hold three days, eggs a week in the shell. Once dressed it is finished within the hour.
