Method

  1. Preheat the oven to 190°C and place the potato, zucchini, tomato, onion, and garlic in a baking dish.

  2. Add tomato puree, olive oil, oregano, paprika, salt, black pepper, and a little water.

  3. Toss everything well so the vegetables are coated with the tomato and olive oil mixture.

  4. Spread the vegetables in an even layer and cover the dish loosely with foil.

  5. Bake until the potatoes begin to soften.

  6. Remove the foil and continue roasting until the vegetables are tender and lightly caramelized at the edges.

  7. Rest for 10 minutes, then finish with chopped parsley before serving.
