You'll need: Stovetop.
No inactive time, but the vegetables are cooked one at a time in the same pan, so keep each batch on a plate while the next one goes in.
Method
Stir the gochujang, soy sauce, sugar, half of the sesame oil, and half of the minced garlic into a smooth sauce.
Heat a small amount of neutral oil in a pan and sauté the carrot with a pinch of the measured salt until just tender but still bright. Transfer to a plate.
Cook the zucchini in the same pan until lightly softened, then transfer it beside the carrot.
Wilt the spinach in the pan, squeeze out excess moisture when cool enough to handle, and season it with a little sesame oil and garlic.
Cook the bean sprouts until crisp-tender, then season lightly with the remaining measured salt.
Fry the eggs sunny-side up or to your preferred doneness, keeping the yolks soft if you like a classic mixed bowl texture.
Divide the warm cooked rice between bowls. Arrange the cooked vegetables and cucumber on top in separate sections.
Top each bowl with a fried egg, sesame seeds, and the prepared sauce. Mix thoroughly at the table before eating.
How to tell it's done
The rice should be warm and soft, the vegetables crisp-tender, and the egg yolk softly set if served classic style.

Serve with extra gochujang sauce on the side so each person can adjust the heat.
Substitutions
- Use Mushroom instead of zucchini for a deeper savory flavor.
- Use Pear or a little extra Sugar if Asian Pear is not available in nearby stores, but the flavor will be less traditional.
- Use tamari-style soy sauce only if the product is clearly suitable for your allergen needs; regular soy sauce and many gochujang brands may contain wheat.
