You'll need: Stovetop.

No long inactive time is required, but the coconut-khoya filling must cool until it can be shaped before battering and frying.

Method

  1. Make the filling: Place a heavy pan over low-medium heat. Add the freshly grated coconut with the measured portion of date palm jaggery and stir until the jaggery melts.

  2. Once ambient moisture visibly retracts, fold the crumbled khoya (mawa) directly into the heated mixture. Maintain agitation and heat application until the composition divorces cleanly from the pan's edge, coalescing into a single, firmly sticky mass. Eliminate the heat source and force a cooling period.

  3. While the coconut and khoya mixture is still warm enough to work, grease your hands and take small portions. Roll each into a tightly packed ball, then press down with your palm to make a thick, firm disc (peda).

  4. Make the encasement batter by firmly whisking the all-purpose flour, the measured volume of melted ghee, and water. Modulate hydration gradually to guarantee an smooth, very viscous, lump-free liquid architecture (paralleling a dense crepe batter).

Tip

Keep the batter thick enough to coat the coconut discs. If the filling feels loose, cook it a little longer before shaping.
