Massage the boiled, scored eggs and the large potato chunks with a trace amount of turmeric and salt to prep them for frying.
Bring the mustard oil to a gentle smoke point in a kadhai to burn off its pungency, then temper the heat to medium-low.
Lower the eggs into the oil, frying them until they achieve a gorgeous, golden-blistered crust. Extract and set aside securely. Next, introduce the potato chunks to the same flavored fat, searing until their exteriors turn a golden brown. Extract and set aside.
In the residual oil, sprinkle a pinch of sugar. Allow it to caramelize instantly—this chef's secret imparts the signature rich, red hue to the final curry. Follow immediately with the bay leaf and cumin seeds.
Add the finely processed onions. Sauté with dedication until they completely surrender and turn a deep golden brown.
Stir in the ginger and garlic pastes and cook hard for 2 minutes until the raw smell has gone.

Add the chopped tomatoes with the turmeric, red chilli powder and cumin powder. Cook the base down hard, adding a splash of water if it catches, until the tomatoes break up and the oil separates.
Reintroduce the seared potatoes to the pan, tossing them to coat thoroughly in the heavy masala for 2 minutes.

Pour in the warm water, season accurately with salt, and bring to a confident boil. Cover and maintain a gentle simmer for 10-12 minutes until a fork easily pierces the potatoes.

Submerge the blistered eggs into the simmering gravy. Allow the ensemble to cook for 2 final minutes so the eggs absorb the broth.
Dust the surface with the aromatic Bengali garam masala, stir gently to incorporate, and immediately cut the heat. Serve steaming hot.
