No inactive time is needed; fry as soon as the thick batter is mixed so the corn stays sweet and the edges crisp.

Method

  1. Lightly crush half the sweet corn kernels so the batter binds while some kernels remain whole.

  2. Mix the corn with garlic, spring onion greens, coriander leaves, turmeric, coriander powder, black pepper, salt, flour, and egg.

  3. Add water little by little only until the mixture becomes a thick spoonable batter.

  4. Heat the measured cooking oil in a pan over medium heat.

  5. Drop spoonfuls of batter into the oil and flatten slightly.

  6. Fry until golden and crisp on both sides, then drain on a rack or paper towel.

  7. Serve hot while the edges are crisp.
