You'll need: Stovetop.

No inactive time is counted; fry the fritters as soon as the batter is mixed so the conch stays tender.

Method

  1. Mix Conch with Lemon Juice, Onion, Green Bell Pepper, Celery, Coriander Leaves, and Scotch Bonnet Pepper.

  2. In another bowl, mix All-Purpose Flour, Baking Powder, Salt, and Ground Black Pepper.

  3. Add Egg and cold Water to the flour mixture, then stir into a thick batter.

  4. Fold the seasoned Conch mixture into the batter.

  5. Heat Cooking Oil in a deep pan and drop spoonfuls of batter into the hot oil.

  6. Fry for 3 to 4 minutes, turning once, until the fritters are golden and cooked through.

  7. Drain on a rack or paper towel and serve hot.

How to tell it's done

The fritters should be crisp outside, tender inside, and dotted with small pieces of conch and vegetables.

Getting it right

Tip

Chop the conch very finely so it cooks through before the outside of the fritter over-browns.

What to serve it with

Serve with a citrusy dipping sauce, hot sauce, or a simple cabbage salad.

Common mistakes

The fritters are dark outside but gummy in the middle.
Fry small spoonfuls and keep the oil at medium-high heat. Large fritters brown before the conch and batter cook through.

Substitutions

  • Conch — Use another firm shellfish only if Conch is unavailable, but label it as an adaptation.
  • Scotch Bonnet Pepper — Use a small amount of Habanero Pepper for similar heat if needed.

Storing and reheating

Conch fritters are best straight from the oil. Refrigerate leftovers for up to 2 days and re-crisp in a hot oven or air fryer; freezing is not recommended for best texture.
