You'll need: Stovetop.

Method

  1. Heat the mustard oil in a pan until it smokes. Lower the heat to let it cool slightly, removing the harsh raw pungency.

  2. Add the finely crushed garlic and slit green chillies. Sauté for a few seconds until the garlic is fragrant but not browned.

  3. Add the sliced button mushrooms. Stir fry on medium-high heat for 5 minutes. The mushrooms will release water and then start to brown slightly.

  4. Pour in the measured water and add salt. Bring the mixture to a boil.

  5. Stir in the coarsely powdered roasted sesame seeds. Reduce the heat and let the soup simmer for 8-10 minutes.

  6. The sesame powder will thicken the broth slightly and lend it a deep, earthy color. Turn off the heat.

  7. Serve very hot, enjoying the unique rustic flavors.
