You'll need: Stovetop.
Method
Heat the cooking oil in a wide, heavy-bottomed pan over medium heat. Add the cumin seeds and allow them to crackle.
Add the thinly sliced potatoes to the pan. Fry them uncovered on medium heat for several minutes until they develop a slight golden crust and are halfway cooked.
Add the sliced onions and slit green chillies to the pan with the potatoes. Mix well.
Sprinkle the turmeric powder, red chilli powder, and coriander powder over the vegetables. Toss everything together so the spices coat the potatoes and onions evenly.
Lower the heat and cook uncovered for a few more minutes, stirring occasionally. The onions will soften, shrink, and caramelize alongside the potatoes.
Once the potatoes are completely tender and the onions are beautifully golden, sprinkle the salt and dry mango powder (amchur). Give it a final toss.
Turn off the heat, garnish with fresh coriander, and serve.

Getting it right
Tip
Adding the onions after the potatoes have already developed a crust prevents the onions from turning to mush and keeps the entire sabzi perfectly dry and slightly crisp.
