Method
Heat 1 tablespoon of oil in a pan. Add the squeezed soya chunks and roast them for 3-4 minutes on medium heat until lightly golden. Remove and set aside.

In the same pan, heat the remaining oil. Add the cumin seeds and let them splutter.
Add the chopped onions and fry until golden brown.
Stir in the ginger garlic paste and chopped green chillies. Sauté until the raw smell vanishes.
Add the tomatoes, turmeric, red chilli powder, coriander powder, and salt. Cook until the tomatoes are soft and the masala releases oil.
Toss in the green peas and the roasted soya chunks. Mix well so the masala coats everything thoroughly.
Sprinkle 2-3 tablespoons of water, cover the pan, and simmer on low heat for 5 minutes. This helps the soya chunks absorb the flavors without making it a gravy.

Remove the lid, sprinkle garam masala, and mix. Turn off the heat and garnish with fresh coriander.

Getting it right
Tip
Squeezing out all the water from the boiled soya chunks is the most important step. If they hold water, they won't absorb the delicious masala.
